







These carved pumpkins show just how creative you can be! I love the idea of taking out this insides (making a delicious soup with them), and using the pumpkin shell as a vase. A great idea for a spooky Halloween party!
Pumpkin soup:
(serves 4-6)
1 whole pumpkin (or you can use butternut squash)
5 carrots, peeled & chopped
Olive oil
6 tomatoes, chopped
Basil
Vegetable stock or water 1.5 litres
Seasoning

Seasoning
- Place the pumpkin (or squash) and carrots in a pan and cook in a little olive oil until they are soft.
- Add the tomatoes & herbs and continue cooking
- Add the stock (or water), season lightly and simmer for 20-30 minutes
- When the vegetables are soft, blend the soup in a blender
- Check the soup for seasoning and serve with a swirl of cream and a leaf or two of basil
